Desmond Payne is the Master Distiller of Beefeater and also the most experienced gin distiller. This expertise proved useful in 2007 when he was given the opportunity to create his own personal recipe based on gin and tea, the Beefeater 24. Mixing tea with alcohol is a centuries-old tradition, although it was no longer popular at the beginning of this century. Desmond Payne came up with the idea during a trip to Japan, where the use of quinine (an antimalarial drug extracted from the bark of the cinchona tree) is strictly regulated. Local tonic production is prohibited in Japan, and imported tonics may only contain 80 parts per million of quinine. These bland tonics weren't to Desmond's liking. He started mixing fresh green tea with Beefeater, which gave him the idea to use green tea in Beefeater gin. And—eureka! - the recipe for the Beefeater 24, with its very own style and character, was born.
