Description
"WINERY ON" (AKA Demuerte) is Pablo Cortés (winemaker) and his wife Karel Eissner. They are both passionate about wine and art. Recently, they decided to combine their two passions (oenology and creativity), and this Demuerte project was born.
Their goal: to produce high-quality wines in unique and eye-catching packaging. Pablo has over 15 years of experience as a winemaker at various Spanish estates. Several of his wines have won major awards. Karel specializes in design and photography. The result is a project featuring exceptional Demuerte wines. WINERY ON covers 20 hectares, located between 300 and 600 meters altitude.

Grape variety : Monastrell (Mourvèdre), 10% Syrah and 10% Petit Verdot
Terroir:
The soil is poor and consists mainly of limestone. The region itself has a very extreme climate: very hot summers and freezing winters.
Aromatic:
Aromas of ripe red and black fruit, with some smoky and spicy undertones.
Flavor profile:
Full and round in the mouth, with soft tannins.
Vinification:
Manual harvest, with grapes collected in 20kg crates to ensure they arrive at the winery undamaged. Fermentation at 24°C in stainless steel tanks, maceration for 21 days, followed by aging in new French oak barrels for a minimum of 18 months.
Food pairing:
Ideal with dishes containing roast red meat.
